About the Coffee
Nawin and Tina are third-generation coffee farmers who also run a processing mill, a roastery, and a cafe in Mae Suay, Chiang Rai. We find their willingness to learn and their drive to build a better reputation for coffee from this region very inspiring. They pay great attention to thier coffee trees and go to great lengths to ensure that the trees are covered with enough shade. Thier farm is located on Hua Chang, a special area at the highest point of Doi Chang, Chiang Rai, which is one of the most famous coffee-growing regions in Thailand.
The coffee trees are ideally positioned, receiving enough morning sunlight, yet remaining in the shade once lunchtime passes. Since the farm is protected from excess sunlight and heat by the mountain, the coffee fruits take longer time to ripen than other zones of Doi Chang, and than most other regions in the country. This results in a complex and fruity cup that we feel is very rare compared to the other coffees we found in this famous region.
The processNawin and Tina’s coffee is processed through a shade-dried natural method. In this process, the coffee fruits are picked, cleaned, and floated in order to remove underriped and defective beans from the lot. While most natural processed coffees are dried in direct sunlight, this coffee is dried on raised beds under shade for 20-25 days.
