About the Coffee
Thai High Ventures is one of the most innovative producers we’ve had the pleasure to work with. Founded by Ray Buerger, a passionate producer who moved to Chiang Mai 7 years ago from Denver, Colorado. His energy and determination continue to inspire Roots; each year our partnership with Ray and his team has grown from strength to strength - just like the quality of his coffee.
A little more complex than the usual honey process, this coffee goes through a process called Malolactic Fermentation. It takes on the first few stages of the honey process, of which the skin of the coffee is removed before the beans are left to dry on raised beds. Ray then ferments the coffee at a low temperature while making sure the coffee is completely sealed off from oxygen for 72 hours. This gives the coffee a delicate acidity in the cup with a very smooth mouthfeel.
